The outdoor gardens here at The Plant have recently made some exciting progress! In the last couple months Kate Purvis, our Outdoor Garden Coordinator, and other volunteers spread 32 cubic yards of compost, laid paths of wood mulch, and planted nearly the entire garden! Since the beginning of the summer, despite being limited to hand watering, they’ve harvested a quart or two a day of strawberries, and are starting to get the first tomatoes, eggplant, baby beets, and zucchini harvests. Our outdoor garden folks are collaborating with Illinois Institute of Technology students on building a drip-irrigation system that will help with daily maintenance and improve crop yields. Throughout the season we’ll be updating our followers on new harvests and planting in the garden, as well as the delicious ways we will be utilizing our harvests in the kitchen.

Kate is BRILLIANT. She’s already harvested gorgeous heirloom tomatoes, eggplant, and much more. Can’t wait for the fall harvest!
